First, take your ice cream and put a healthy amount into each cone. You want the ice cream to be firmly packed in there, but be careful not to crack the cones.

Sit the cones in a cup or a pitcher (or a couple of them), and put them in the freezer for at least an hour.

Melt the chocolate and coconut oil together in a small bowl in the microwave. I do this on High (100%) for 20 seconds at a time, stirring after each burst, but you could also do it in a bowl over a saucepan of simmering water, making sure the base of the bowl isn’t touching the water.

Pour the melted mixture into a nice, deep container that is just wide enough to fit your cones. A smallish drinking glass or jam jar is pretty perfect. Working quickly, dip one cone at a time in the chocolate mixture, letting any excess drip away. Quickly sprinkle on any toppings, if using, and then put the cones back in the freezer to set for about an hour.
